Ummmm, baba ghanoush. I’m craving baba ghanoush something fierce at the moment.
As some of you may know, this writer is a vegan. Not by choice. I’m a vegetarian (lacto-ovo) by choice. But, I can’t stand the thought of eating baby chicks (grew up on a farm, I know what comes out of those shells!) and I’m lactose intolerant. Thus, a vegan.
I’m often asked by strangers, friends and family, “Just what do you eat?” 🙄

One of my favorite recipes is baba ghanoush. This ugly (yes, it is ugly), delightful dish is not to be missed. Made from roasted eggplant (yum!), tahini (sesame seed paste), olive oil and spices, it is easy to make and even easier to eat. You can eat it with raw veggies like a dip, spread on sandwich bread for an awesome lunch, or take your fingers and just dive right in. It really is that good.
Guess who’s going to the supermarket… 😉
